In a bowl, mix the oats, sugar, yeast and salt

To the above mix, add milk and egg then gently stir

Add the butter and stir as you fold for a few minutes. The dough is quite soft not firm

Let it sit in a warm place to rise. Mine took about 30 mins. Can get to an hour

Once its sort of doubled it's size pour it out on a floured surface to make a semi-firm dough that can roll out easily. Keep folding it as you add the flour, because it is not a kneading process as such. (this part is a bit sticky and probably messy :-) To completely make it wheat free, you can use oil instead of flour on the surface and the rolling pin. Just a bit

Flatten lengthwise then add toppings of choice. I added raisins, shredded coconut and sesame seeds.

Roll it to form the rectangular shape, or oval. Feel free :-) Spread oil on top. I Did coconut oil

Put it in a buttered/oiled baking tin. Then Bake. Now I have a full gas oven. I preheat it for 10 mins then bake on high heat for 30 mins, reduce it to low then do another 10 mins. For electric oven bake at 180 for 30 mins. *Ovens may vary...

Yummmm. Minimal use of wheat. Or completely wheat free if you use oil in place of flour in step 5... Enjoy :-)
