4 cupWatermelon, Cubed
1Sweet, Red, or Vidalia Onion, Finely Chopped
1/4 cupRed Wine, Balsamic, or Sweet Rice Vinegar
1/2 cupOlive Oil (Optional)
1Salt and Pepper
2 tbspFresh Mint or parsley, Chopped
4 ozFeta Cheese, Crumbled

In a small bowl, combine vinegar, salt and pepper and whisk until salt is dissolved. Add in chopped herbs, taste, and adjust seasonings.

In a large bowl, combine melon, onion, and feta. Pour dressing over melon mixture and toss gently until evenly mixed.

Serve immediately.
