  1. 4 cupWatermelon, Cubed
  2. 1Sweet, Red, or Vidalia Onion, Finely Chopped
  3. 1/4 cupRed Wine, Balsamic, or Sweet Rice Vinegar
  4. 1/2 cupOlive Oil (Optional)
  5. 1Salt and Pepper
  6. 2 tbspFresh Mint or parsley, Chopped
  7. 4 ozFeta Cheese, Crumbled

  1. 1

    In a small bowl, combine vinegar, salt and pepper and whisk until salt is dissolved. Add in chopped herbs, taste, and adjust seasonings.

  2. 2

    In a large bowl, combine melon, onion, and feta. Pour dressing over melon mixture and toss gently until evenly mixed.

  3. 3

    Serve immediately.
