2 cloveGarlic, crushed
2 lbmedium-sized tomatoes (about 6), peeled and chopped
1Medium-sized cucumber, peeled and cut into chunks.
1 largeGreen pepper, seeded and chopped.
1 cupsoft bread cubes, crusts removed
1/4 cupRed wine vinegar
2 cupTomato juice
1 cupWater
1/4 cupOlive oil
1/2 tspSalt
1/4 tspFreshly ground black pepper
Garnish
1/2 cupChopped green onions
1/2 cupGarlic croutons
1/2 cupChopped green pepper

Put the garlic, tomatoes, cucumber, green pepper, bread and vinegar in an electric blender or food processor and whirl until smooth.

Pour through a fine sieve and discard the solids.

Add the tomato juice, water, oil, salt and pepper.

Chill well and serve with garnishes.
