  • 2 cloveGarlic, crushed
  • 2 lbmedium-sized tomatoes (about 6), peeled and chopped
  • 1Medium-sized cucumber, peeled and cut into chunks.
  • 1 largeGreen pepper, seeded and chopped.
  • 1 cupsoft bread cubes, crusts removed
  • 1/4 cupRed wine vinegar
  • 2 cupTomato juice
  • 1 cupWater
  • 1/4 cupOlive oil
  • 1/2 tspSalt
  • 1/4 tspFreshly ground black pepper
  • Garnish
  • 1/2 cupChopped green onions
  • 1/2 cupGarlic croutons
  • 1/2 cupChopped green pepper

Steps

  1. 1

    Put the garlic, tomatoes, cucumber, green pepper, bread and vinegar in an electric blender or food processor and whirl until smooth.

  2. 2

    Pour through a fine sieve and discard the solids.

  3. 3

    Add the tomato juice, water, oil, salt and pepper.

  4. 4

    Chill well and serve with garnishes.
