Ingredients

20 mins
2 servings
  1. 1 packagesfresh lasagne pasta
  2. 10cherry tomatoes, quartered
  3. 1 bunchasparagus
  4. 1 bunchspring onion
  5. 1 tbspolive oil, extra virgin
  6. 1ground black pepper to taste

Steps

20 mins
  1. 1

    Heat a frying pan or skillet with the oil to a medium heat

  2. 2

    Quarter the tomatoes, hop the spring onion into 1cm chunks and the asparagus into 2cm chunks

  3. 3

    Throw the veggies into the pan

  4. 4

    Cut the lasagne into 2cm strips

  5. 5

    When the asparagus is tender with a slight crunch, add 2tbs water, put to low heat and season.

  6. 6

    Add lasagne to boiling water for 2mins until tender.

  7. 7

    Remove lasagne and stir into veggies.

  8. 8

    Serve and enjoy
