Remembering how standing room only networking events had appetizers that rivaled potlucks and had no flare, I thought of these Kickups, because wasabi & pickled ginger are a kick to the taste buds. I was also thinking about it being paired with Reisling or Muscato wine being that it was originally intended to be a Muscadine appetizer.

Remembering how standing room only networking events had appetizers that rivaled potlucks and had no flare, I thought of these Kickups, because wasabi & pickled ginger are a kick to the taste buds. Take stems out of mushrooms and reserve for other cooking. Using a ground nut that has a creamy texture toss with minced garlic. Note that using cashews will make it sweeter. Cover the bottom of the mushrooms caps with a little bit of this mixture and layer with thin sliced carrot medallion. Carrot should be small enough to fit in caps snug. Layer cooked ground shrimp. To make the shrimp you need almost a teaspoon of creamy Italian dressing. Cook shrimp till done then toss in dressing and chop into a fine mince. Add a thin layer of this as to allow room for the Quinoa layer. To make Quinoa boil a kettle of water adding two parts to the desired amount of quinoa. Here is where you can play with the recipe. You can add an aromatic flower to bloom in the quinoa being that it will only be seasoned by the teaspoon of sesame oil, salt, and minced chives. Layer julienned pickled ginger on quinoa and dots of wasabi to complete. Make these with medium to large mushroom caps. When making this w
