Slice chicken breast in half, not needed for fish

Season chicken / fish with favorite seasoning

Set aside for now ( keep moisture to a minimum ). pat dry without removing seasoning

combine all ingredients in mixing bowl (not the chicken/fish)

heat oil in deep fryer to approximately 375°F.

there should be enough oil to submerse the fish/chicken

BATTER SHOULD BE THICK NOT LIKE PANCAKE BATTER

ADD FLOUR SLOWLY UNTIL BATTER IS NICE AND THICK AND SMOOTH

use thongs to dip chicken/fish in batter and place in pan slowly

turn over if not submerged when golden brown

remove your fantastic chicken/fish and place on towel to absorb extra grease
