Mike's Baileys Beginners Irish Cheesecake

It's finally that time of year to get your Irish on!

You can omit the Creme de Menthe and add another 1/8 cup of Baileys Irish Cream to compensate in this no bake Cheesecake. Just be sure to use the mint version of chocolate chips. I tried finding a way to sneak some Guinness beer in this but it just wasn't happening. ;O)

Ingredients

  1. Irish Cheesecake
  2. 1Pre-made Graham Cracker Pie Crust Or Pre-made Chocolate Pie Crust
  3. 18 oz Philadelphia Cream Cheese
  4. 1/4 cupBaileys Irish Cream Liqueur
  5. 1/8 cupGreen Creme de Menthe Liqueur
  6. 1 canEagle Brand Condensed Milk
  7. 3/4 cupMint Chocolate Chips
  8. 1 tspVanilla Extract
  9. 1/3 cupLemon Juice
  10. 4Mint Leaves [garnishment]
  11. 1/3 cupMint Chocolate Chips [garnishment]
  12. 1/3 cupGraham Cracker Crumbs [garnishment]
  13. 1Green Food Coloring [optional - color to preference]
  14. 1/2 cupChocolate Sauce [garnish drizzle]

Cooking Instructions

    Bring cream cheese to room temperature or heat slightly in your microwave.

  2. 2

    Add everything in a bowl, except for lemon juice, chocolate chips and garnishments and blend until any lumps are fully dissolved.

    Important step:

    Slowly add your lemon juice and blend with electric mixer to avoid curdling.

    Fold in chocolate chips with a spatula and pour into your pre-made crust.

    Garnish as desired, cover and chill for 2 hours.

    Authors Notes:

    You can easily make this cheesecake without the Cream De Menthe and increase your Baileys Irish Cream to 1/3 cup. Especially if you've used the mint version of chocolate chips.

    Also, serve these slices in smaller wedges than you usually would. They're super rich and pack a serious punch at 17% unburned alcohol.
