
Cauliflower/broccoli Cheese Dish

Preheat the oven to 350. Peel and finely slice the garlic and put into a medium pan on a medium heat with the butter. Once the butter has melted, stir in the flour for a minute to make a paste, then gradually add the milk, whisking as you go until smooth. Add the broccoli and simmer for around 20 minuted or until the broccoli is cooked and starts to break down. Then mash with a stick blender, add a splash of milk. Grate in half of the cheddar cheese.
Arrange the cauliflower in an appropriately sized baking dish, pour over broccoli white sauce and grate over remaining cheddar. Blitz the bread into breadcrumbs then pulse in the thyme and almonds. Toss with a little oil and a pinch of salt and pepper. Scatter evenly over cauliflower cheese. Bake for one hour or until golden brown and cooked through.
