Simmer the chicken or use chicken bones, such as legs, ribs, neck, and wings, with onions! Skim off any foam regularly to keep the broth clear! Season with rock sugar and salt to taste!

Season the ground meat with spices and mix well to taste. Place a small amount of meat onto a wonton wrapper and fold it! Use water to seal the edges or press down with a fork! You'll have wontons like in the picture!

Boil water with a pinch of salt, then add the wontons and cook until done. Remove and place in a bowl, pour the broth over, and add a little pepper, chives, and fried shallots for aroma!
