Ingredients

10 servings
  1. For shredding:
  2. 100 gramswalnuts (optional)
  3. 2.5 cups (300 grams)carrots
  4. Whisking:
  5. 2 c (280 g)wholemeal flour
  6. 2 tspbaking soda
  7. 1/2 tspsalt
  8. 1 tspground flax seed (optional & good for you)
  9. 2 tspcinnamon
  10. 1/4 tspnutmeg
  11. 1/8 tspcloves
  12. 1/16 tspginger
  13. Creaming I:
  14. 1 c (195 grams)sunflower oil
  15. 1 clight sugar (170g)
  16. 1/2 cbrown sugar (95g)
  17. Creaming II:
  18. 120 mlaquafaba
  19. 2 tspvanilla extract
  20. Last main ingredient:
  21. 1 csoy milk (with 1tsp lemon juice)
  22. or
  23. 130 gramsyoghurt
  24. Only if available:
  25. 1inside of vanilla pod
  26. 1 tsporange zest or juice

Steps

  1. 1

    (Walnuts at 4.5 and) carrots speed 4.5 - 6 for 10sec and set aside

    Blend whisk ingredients speed10 for 5sec and set aside

  3. 3

    Cream I ingredients speed5 for 1min

  4. 4

    Add cream II ingredients and mix at speed5-6 for 1min

  5. 5

    Carrots (and if wanted nuts) at reverse speed 2-3 for 60sec OR fold in manually

    Oven at 175°C

  7. 7

    Add carrot mix manually into flour mix alternating with clotted milk (or yoghurt)

    Pour dough onto lined baking sheet

    Bake for 25 minutes

    Turn oven off, leave in 10min with open door

    Transfer to rack for cooling down
