Ingredients

  1. 2 canOrganic low sodium black beans
  2. 4Celery stalks chopped and diced
  3. 1/2Red bell pepper chopped and diced
  4. 1/2Onion chopped
  5. 2 tspCumin
  6. 2 cupChicken broth
  7. 1 cloveGalic (optional)
  8. 1 dashLemon juice
  9. 4 tbspOlive oil

Steps

  1. 1

    Combine oil & veggies to a medium sized pot on high heat. (*garlic optional* I prefer to use 1 tbs of garlic salt*)

  2. 2

    Let veggies sauté until onions are moderately clear.

  3. 3

    Add chicken broth and black beans to high heat

  4. 4

    Let boil for 10 minutes. Stir occasionally. (*important to stir from bottom up so beans do not stick to the bottom of pan*)

  5. 5

    Lower heat to low for 5 minutes. Stir in cumin.

  6. 6

    *optional* add lemon juice before serving
