Combine oil & veggies to a medium sized pot on high heat. (*garlic optional* I prefer to use 1 tbs of garlic salt*)

Let veggies sauté until onions are moderately clear.

Add chicken broth and black beans to high heat

Let boil for 10 minutes. Stir occasionally. (*important to stir from bottom up so beans do not stick to the bottom of pan*)

Lower heat to low for 5 minutes. Stir in cumin.

*optional* add lemon juice before serving
