Easy Slow Cooker Chicken Taco Soup

Ingredients

6 servings
  1. 1 cupmild salsa
  2. 1 (15 ounce)can black beans, rinsed and drained
  3. 1 (15 ounce)can pinto beans, rinsed and drained
  4. 1 (15 ounce)can corn, drained
  5. 1 (14.5 ounce)can petite diced tomatoes
  6. 3 tablespoonshomemade taco seasoning (or store-bought)
  7. 2 cupslow sodium chicken broth
  8. 1 poundboneless skinless chicken breasts
  9. Optional toppings:
  10. cilantro
  11. sour cream
  12. grated cheese
  13. avocado
  14. green onion
  15. tortilla chips

Cooking Instructions

  1. 1

    Place salsa, black beans, pinto beans, corn, diced tomatoes, taco seasoning, and chicken broth in slow cooker. Stir to combine. Nestle chicken into the slow cooker so that it’s completely covered by the liquid and other ingredients.

    Cover and cook on low for 6 hours. Remove chicken and shred or cut into bite-size pieces. Stir chicken back into the soup.

    Serve with toppings as desired.
