Okay so I recently saw the forks over knives documentary and I've been motivated to change the way I eat. I absolutely love meat and giving it up is a challenge so I've decided to eat meat sparingly and use it as flavouring and eat more whole plant foods. I have one of Dr. Campbell's books: Whole: Rethinking the science of nutrition and his sons book the Campbell plan. I plan on reading the china study next. So here it goes.

Ingredients

  1. 1/2 canbeans(any..black bean, pinto beans etc)
  2. 1/2onion, chopped
  3. 1/4 cupfrozen or fresh kernel corn
  4. 1ground tomato (i freeze it and put it in my ninja)
  5. 2portobello mushrooms (chopped)
  6. 1cumin ( to taste)
  7. 1paprika ( to taste)
  8. 1garlic powder( to taste)
  9. 1 tsphot chili powder
  10. 1 tspblack pepper
  11. 1salt (optional for those who use it)
  12. 1tomato, chopped
  13. 1spiralized cucumber
  14. 1shredded cheese
  15. 1plain full fat yogurt or sour cream

Steps

  1. 1

    Mix first eleven ingredients in a pan and heat thoroughly.

  2. 2

    Place tortillas on tortilla pan and place in 350°F oven for 7-8 minutes

  3. 3

    Place veggie filling in taco and add spiralized cucumber, chopped tomato , shredded cheese and 1 tbsp of yogurt
