Ingredients

  1. 1 1/2 cupself raising flour
  2. 2 tspbaking powder
  3. 1 1/2 cupmargarine
  4. 1 1/2 cupcast sugar
  5. 6eggs
  6. 4 tbspmilk
  7. 1strawberry jam
  8. 16 tbspwhipping cream
  9. 1icing sugar
  10. 1/2 tspVanilla Essence

  1. 1

    Preheat oven to 375°F

  2. 2

    Sift flour and baking powder into a bowl

  3. 3

    Cream the margarine and sugar together in a bowl until light and fluffy

  4. 4

    Beat in the eggs gradually, adding a teaspoon of flour between each addition

  5. 5

    Gently fold in the rest of the flour with the milk and vanilla

  6. 6

    Spoon equal portions of the mixture into cake pans and level them

  7. 7

    Bake in the centre of the oven for 30-35 minutes

  8. 8

    When cold, sandwich together with jam and cream and dust the top with icing sugar
