Bring 1 cup of water to a boil, remove from heat add mint leaves and allow to infuse for at least 20 minutes

Peel cucumber leaving alternating strips of peeling

slice cucumber and lemon into gallon size container fill almost full with cold water leaving room for the 2 cups of mint water

Add mint and refrigerate overnight
