While working at a small local zoo we have a farmer that sells his goodies outside of our zoo. Us keepers are luck that when he can no longer sell things he will give them to us free. We get a lot of free apples that way. So I had to do something with them and this recipe is the end result.

1/4 cupmelted butter
1egg
1 cupmilk
1 cupshredded apple
1 1/4 cupall-purpose flour
1 tspbaking powder
1 tbspsugar

Steps

Combine all the ingredients except the flour.

Fold in the flour SLOWLY.

Pan fry until crispy and golden brown. Make sure to use either a non-stick pan or butter so the pancakes do not stick to the pan.

I like to use the Vanilla Glaze Icing that is also listed under my recipes for the syrup but you are welcome to use what sounds good to you.
