  • 2 cupwhite rice
  • 2 cuphot water
  • 1 canchicken broth
  • 1 canRotel seasoned diced tomatoes
  • 6 tbspvegetable oil
  • 1 packettaco seasoning
  • 1/2 cupfinely cut up carrots

    Brown rice using vegetable oil

  2. 2

    Add water, chicken broth and taco seasoning. Bring to a boil.

  3. 3

    Add tomatoes and turn down heat to low

  4. 4

    Cover and simmer until rice is almost done. Add carrots. Cook a few more minutes until rice is as you like it.
