Heat oil in Pan

Dice Veggies and add to oil. Cook for 3-5 minutes until vegetables are tender.

In a food processor, blend the entire can of Chipotle with the Adobo Sauce. Add 2 tablespoons off blended chipotle to the pan with the veggies. (You can freeze the leftover chipotle for the next time you make this dish.)

Add salt and slowly add the cream while stirring to the pan of cooked veggies (making sure you stir to thicken the sauce). Let simmer for 10-15 minutes.

This sauce is good with Rice or Pasta. Add cooked Chicken or Shrimp and you have a delicious meal.
