2 tbspolive oil
1onion, peeled and chopped
1garlic clove, peeled and chopped
1potato, peeled and cubed
500 gvegetables, chopped
1 litresstock

Heat the oil in a large saucepan, then add the onion, garlic, potatoes na vegetables. Stir and cook for 15minutes.

Add the stock and season. Bring to the boil, then simmer gently for about 20 minutes.

Whizz with a hand blender or in a blender until smooth. Serve.
