Ingredients

  • 3 tbspGround Cumin
  • 1 tbspSalt
  • 1 tspBlack pepper
  • 1 tspCayenne pepper
  • 1 tspGround ginger
  • 2 pinchSaffron
  • 1 tspGround cloves
  • 1 tspGround coriander
  • 1 tspGround allspice
  • 2 cloveGarlic
  • 1 tspGround turmeric
  • 5 tbspOlive oil
  • 1/2 cupCarrots, coarsely chopped
  • 1 lbStew Beef
  • 3Red potatoes
  • 1/2 cupRaisins
  • 1 canGarbanzo beans
  • 1 canChopped tomatoes
  • 1 bunchFresh cilantro
  • 2 cupVegetable broth
  • 1Sweet onion, coarsely chopped

Steps

  1. 1

    Combine dry spices in a small bowl

  2. 2

    Place 3 tbsp olive oil in bottom of tagine, then add 1 tsp of spice mix and the garlic.

  3. 3

    Layer in carrots and onion, the sprinkle one tsp of dried spice mix on top

  4. 4

    Add beef, then 2 tsp of spice mix.

  5. 5

    Layer potatoes, garbanzo beans, raisins and tomatoes (with juice) in tagine, then cover with remainder of spices.

  6. 6

    Add vegetable broth. Drizzle remaining olive oil on top. Then place the whole bunch of cilantro on top.

  7. 7

    Cook tagine on low heat on stovetop or in oven at 325°F for 3 1/2 hours. Remove cilantro before serving. Serve with couscous.
