Its Easy to throw together and healthy too...lovely for hot summers days. ..can be eaten hot or cold...you can even throw in some chicken pieces or grilled shrimp if you feel like it. So colorful even the kids will be willing to try it!

Its Easy to throw together and healthy too...lovely for hot summers days. ..can be eaten hot or cold...you can even throw in some chicken pieces or grilled shrimp if you feel like it. So colorful even the kids will be willing to try it!

Chop onions as well as peppers and carrots into strips (julienne)

Slice mushrooms but not too thinly as it will seem to dissapate.

Place frying pan onto the stove. Set to highest heat option. Start by putting your oil into the pan

Then throw in your onions. As the onions start to lightly brown on the edges, throw in your carrots,corn and peppers.then add mushrooms

Sprinkle your spices and salt to taste on. Keep moving veggies around for about 4 minutes.

Boil rissoni pasta in a separate pot with a dash of olive oil and 2 teaspoons of salt. Boil until soft or your preferred texture is reached.

Once pasta is boiled drain and mix in stir fried veggies. Add mayonnaise and chili powder
