Ingredients

  1. 3 cupWater
  2. 1 1/2 cupPolenta
  3. 1/2Red bell pepper, cored, seeded, and minced
  4. 1 tbspExtra-virgin olive oil
  5. 2 tbspMinced fresh chives
  6. 2 tspSalt
  7. 1Ground black pepper

Cooking Instructions

    Bring water to a boil

  2. 2

    Reduce heat to medium and whisk in the polenta

  3. 3

    Add bellpeppers, olive oil, chives, salt, and pepper

  4. 4

    Cook unroll the polenta is very thick 3-5 min

  5. 5

    Pour into a casserole dish and smooth over the top with a ruber spatula, should be 3/4 thick

  6. 6

    Let it cool for 30min

  7. 7

    Preheat grill or pan

  8. 8

    Cut polenta into cubs and brush both sides with extra- virgin olive oil

  9. 9

    Grill each side for about 3 min
