This is my recipe but what makes it so good is something I learned from the cook at my husband's firehouse. Burn the roux! This makes enough gravy for 4 split biscuits.

This is my recipe but what makes it so good is something I learned from the cook at my husband's firehouse. Burn the roux! This makes enough gravy for 4 split biscuits.
Steps

Brown sausage in pan. Take sausage out and leave grease in pan.

Add shortening and melt. Meat shortening is best but I haven't been able to find that in a store in a while so I just use vegetable shortening.

Whisk flour into grease. Now time to break a culinary rule! BURN THE ROUX! Whisk constantly. You want it to be dark brown but not black.

Over medium low heat whisk milk in a little at a time until gravy consistency is achieved.

Add sausage. Add pepper. Salt to taste. This step is very important. Salt-taste-salt-taste.

Serve over biscuits. Enjoy!
