Ingredients

  • 4 cupQuinoa cooked in vegetable stock
  • 1 canRinsed and drained black beans
  • 2Freshly diced tomatoes
  • 1Diced jalapeño
  • 2 tbspGround flax seed
  • 1Egg
  • 2Minced scallion
  • 2Minced green onion
  • 1/3 cupGluten free flour
  • 1/4 cupFresh chopped cilantro
  • 1Salt and pepper
  • 1Olive oil

Steps

  1. 1

    Preheat oven to 350 and prepare a large baking sheet with parchment paper

  2. 2

    Combine quinoa, beans, tomatoes, jalapeños, and ground flax in a medium bowl

  3. 3

    Fold the egg into the mixture slowly

  4. 4

    Stir in onion and scallions

  5. 5

    Sprinkle with half your flour and fold in

  6. 6

    Fold in cilantro, salt, and pepper

  7. 7

    If the mixture is too wet, add more flour

  8. 8

    On medium high heat, add olive oil to the pan to cover the bottom

  9. 9

    Cook parties on pan for 2-3 minutes on each aide

  10. 10

    Put on the baking sheet and cool in oven for 15-20 minutes
