Combine quinoa, beans, tomatoes, jalapeños, and ground flax in a medium bowl

Fold the egg into the mixture slowly

Stir in onion and scallions

Sprinkle with half your flour and fold in

Fold in cilantro, salt, and pepper

If the mixture is too wet, add more flour

On medium high heat, add olive oil to the pan to cover the bottom

Cook parties on pan for 2-3 minutes on each aide
