Ingredients

  1. 1 mediumonion (finely chopped)
  2. 3 tbspolive oil
  3. 2garlic cloves (minced)
  4. 1 tspplain flour
  5. 1/2 cupdry white wine
  6. 1bay leaf
  7. 1/4 tspground black pepper
  8. 1/4 tspkosher salt or sea salt
  9. 1 tbspflat leaf parsley (finely chopped)
  10. 1 kgFresh mussels (scrubbed, debearded and cleaned of sand)
  11. 1Fresh red chilli, sliced or chilli powder (optional)
  12. 1 tbsptomato paste
  13. 1 tspfreshly squeezed lemon juice
  14. 50 mlwater (more or less)

Steps

  1. 1

    Heat the olive oil in a pot on a high medium heat.

  2. 2

    Sauté the onion and garlic until the onion has softened.

    Stir in the flour, and cook for around 1 minute.

  4. 4

    Next add the bay leaf, lemon juice, white wine, salt and pepper.

    Simmer and cover with lid for around 5 minutes.

  6. 6

    Add the tomato paste and stir. Simmer for another 3-5 minutes.

  7. 7

    Add the mussels to the pot and stir. Simmer the mussels for around 5-10 minutes or until they have opened their shells.

    Add water and toss the pan if the liquid thickens too much.

    Check seasoning prior to turning the heat off.

  10. 10

    Lastly, sprinkle with the parsley, stir well and serve.
