  • 2chicken breasts
  • 4thick pieces of halloumi sliced
  • 1 tbspshredded lemon zest
  • 6 sticklemon thyme
  • 1 tbspolive oil
  • 1 tbsphoney
  • 1fig
  • 250 gramsrocket

Steps

  1. 1

    Preheat oven 356°F

  2. 2

    Place chicken, halloumi, lemon zest and lemon thyme into baking dish

  3. 3

    Combine olive oil and honey into a bowl, mix, and pour over chicken and halloumi

  4. 4

    Place in oven for 18-20 minutes or until chicken cooked through and halloumi is golden

  5. 5

    Can serve with a simple fig and rocket salad
