This is a family favorite. My mother used to make it on special occasions but her recipe was lost. My wife makes it with different ingredients but the curry comes out exactly the same. You can substitute the meat with turkey or shrimp or omit the meat for vegan.

  1. Sauce
  2. 1Rotisserie Chicken Shredded
  3. 1 canCoconut Milk
  4. 1 smallChopped Onion
  5. 4Stock Celery (chopped)
  6. 2 tbspButter
  7. 3 canCream of Mushroom Soup
  8. 1 cupHalf and Half
  9. 2 cupChicken Broth
  10. 4 tbspCurry Powder
  11. 2 tbspCorriander
  12. 1 tbspGround Cumin
  13. Condiments (Optional)
  14. 1/2 cupChopped Bacon
  15. 1/2 cupShredded Coconut
  16. 1/2 cupSlivered Almonds or Dry Roasted Peanuts
  17. 1/2 cupSweet Relish
  18. 6 largeBoiled Eggs Chopped
  19. 1Mango Chutney (jar)
  20. Rice
  21. 4 cupJasmine Rice

Steps

  1. 1

    Cook the rice as directed on the package. Note: You can use any kind of rice you wish.

  2. 2

    Add butter to a stock pot on medium high heat, then add celery and the onion and sauté

  3. 3

    Turn down the stove to medium, then add stock and cream of Mushroom soup, coconut milk stir

  4. 4

    Add half and half stir

  5. 5

    Note: curry is a aquired taste and we use a lot in this dish. Only add a little at a time until the spices are good for you

  6. 6

    Add the curry, corriander and cumin and stir

  7. 7

    Simmer 15 to 20 minutes and serve over cooked rice

  8. 8

    Add any or all condiments (Optional)
