Ingredients

  1. 3medium beetroots, boiled and peeled then cut into small cubes
  2. 2medium tomatoes, cut into small cubes
  3. 1 cupwatercress
  4. For the dressing:
  5. 2 clovesgarlic, crushed
  6. 4 tablespoonslemon juice
  7. 3 tablespoonsolive oil
  8. 1/2 teaspoonsalt

Cooking Instructions

    There are two ways to serve this salad. You can either mix the ingredients together or present them spread in layers: the watercress at the bottom then the beetroot then the tomato cubes.

    In a small bowl, mix the dressing ingredients together and pour over the vegetables.

    Serve the salad immediately.
