Ingredients

  • 2 tbspOlive Oil
  • 1/2Onion Finely Chopped
  • 3 cloveGarlic Minced
  • 1 tbspTomatoe Paste
  • 1 largeTomatoe Diced
  • 2 tspCumin Ground
  • 4 cupVegitable or Chicken Broth
  • 1 cupRed Lentils
  • 2 cupWater
  • 1 pinchChili Powder
  • 1Carrot Chopped
  • 1Salt
  • 1Pepper
  • 1Juice of 1 Lemon
  • 1 pinchRed Pepper Flakes
  • 3 tbspCilantro

Steps

  1. 1

    Saute garlic and onion in olive. oil.

  2. 2

    In large pot add sauteed onion, diced tomatoes, sauteed garlic, tomatoe paste, cumin, salt, and pepper.

  3. 3

    Cook on high just a few minutes before adding the other ingredients.

  4. 4

    Add broth, lentils, water, chili powder, and chopped carrot to pot while still on high heat.

  5. 5

    Stir, then reduce heat to simmer.

  6. 6

    While on simmer, cover pot with vented lid or put a wooden spoon between pot and lid to allow ventilation. Simmer 30 minutes or until lentils are soft.

  7. 7

    Stir in salt and pepper to taste.

  8. 8

    Puree half the soup in a food processor. Then add it back to the cooking soup.

  9. 9

    Add lemon juice and red pepper into simmering pot.

  10. 10

    Serve in bowls.

  11. 11

    Garnish with cilantro.
