  • 1 canCoconut milk
  • 2 packagesMixed veggies like broccoli, snap peas, Carrots,
  • 1 1/2 tbspPeanut butter
  • 4 cupCooked rice or noodles

Steps

  1. 1

    ln large skillet, Cook chicken over medium heat. About 3 minutes until almost done

  2. 2

    Add coconut milk and peanut butter, bring to a boil and stirring constantly. Simmer about 7-8 minutes until Sauce thickens

  3. 3

    Add in mixed Vegetables. Sometimes l use a frozen package medley or Asian Medley

  4. 4

    Serve hot over rice or noodles.
