Ingredients

  • 4 tbspButter
  • 2Garlic cloves
  • 1as needed Sea salt
  • 6Red skin (waxy) potatoes, peeled and sliced 1/8 inch thick
  • 2 cupHalf and half or milk
  • 1 cupGrated Gruyere cheese
  • 1as needed Ground nutmeg
  • 1as needed Fresh black pepper

Steps

  1. 1

    Preheat the oven to 400°F or 205 Celsius

  2. 2

    Rub the inside of a baking dish with 1/2 tablespoon of butter.

  3. 3

    Smash the garlic with the side of a knife. Dice it and sprinkle with salt. Finely chop and mix until you have a paste

  4. 4

    Combine half and half, garlic, potatoes and remaining butter in a pot. Bring to a boil over medium high heat.

  5. 5

    Cook for 10 minutes stirring constantly. Be careful not to break the potato slices. The potato starch will have thicken the sauce.

  6. 6

    Transfer in the dish and smooth out the top.

  7. 7

    Hold until ready to bake (or refrigerate overnight).

  8. 8

    Or cover with Gruyere and cook for 20 to 30 minutes until you have a nice golden brown crust.
