Ingredients

  • 1 cupquinoa
  • 2 cupwater
  • 19 ozchickpeas well drained
  • 1/3english cucumber chopped
  • 12cherry tomatoes quarted
  • 1/4 cupfeta cheese
  • 1/3 cupchopped basil
  • 2garlic cloves mincd
  • 2 tbsplemon juice
  • 1/3 cupolive oil, extra virgin
  • 1 tspground cumin
  • 1 pinchof cayenne pepper
  • 1salt and pepper to taste

Steps

  1. 1

    Bring quinoa and water to boil cover the pot lower heat to med low for approximately 12 minutes cool quinoa add remaining ingredients to bowl keep for up to 3 days
