1 cupquinoa
2 cupwater
19 ozchickpeas well drained
1/3english cucumber chopped
12cherry tomatoes quarted
1/4 cupfeta cheese
1/3 cupchopped basil
2garlic cloves mincd
2 tbsplemon juice
1/3 cupolive oil, extra virgin
1 tspground cumin
1 pinchof cayenne pepper
1salt and pepper to taste

Bring quinoa and water to boil cover the pot lower heat to med low for approximately 12 minutes cool quinoa add remaining ingredients to bowl keep for up to 3 days
