Dried longan and red dates

Packet of white grass jelly powder

Soak the dried longan and red dates in water for 5 minutes, then rinse to remove any dust. Drain well.

Prepare the white grass jelly according to the instructions on the package, then pour into a mold and let it set.

To make the sweet soup: Add the rinsed dried longan and red dates to a pot with 6 1/3 cups cold water (about 1.5 liters). Bring to a boil over medium heat. Cook until the longan and red dates are soft and plump, then add the sugar. Stir until the sugar dissolves, then turn off the heat and stir in the vanilla extract. Adjust the sweetness to your taste.

Once cooled, serve the sweet soup in glasses or bowls with the grass jelly cut into strips. Enjoy chilled for a refreshing treat. The longan is soft yet chewy, and the red dates are tender and fragrant—so refreshing!
