
Steak with sweet potato chips (or fries)

Steps

Heat oven to 390°F

Finely chop parsley and tarragon

Peel and slice sweet potatoes with mandolin. Alternatively, cut it to thin French fries

Put sliced sweet potato (use mandolin) on baking sheet and drizzle with olive oil and seasoning. Cook 20 minutes until edges are golden brown

Put shallots and vinegar in bowl and leave for 5 minutes

Add nuts, tarragon, 1/2 parsley, some salt, and 1 1/2 tsp olive oil to bowl

Oil and season steak fillets

Griddle or pan fry steak 3 minutes for medium rare. Rest for 5 minutes in foil

When chips are done, sprinkle with remaining parsley, salt, and any seasoning

Enjoy with green salad
