For the tapioca pearls: Use a water to pearl ratio of 10:1. Bring the water to a boil, then add the tapioca pearls while stirring (keep the heat on).

Once the pearls float to the surface, reduce to medium heat and stir occasionally. Cook for 35 minutes, stirring now and then to ensure even cooking.

After 35 minutes, check that the pearls are fully cooked before turning off the heat.

Add the cooked pearls to 2 tablespoons (30 ml) brown sugar syrup, stir, cover, and let sit for 10 minutes.

After resting, rinse the pearls with cooled boiled water. Do not rinse under running water for too long, as rapid cooling can make them too hard.

After rinsing, drain the pearls well, then mix with another 2 tablespoons (30 ml) brown sugar syrup. The pearls are now ready to use.

Store the cooked pearls in an airtight container and use within 8 hours.

Now, make the milk tea.

Steep one black tea bag in 2/3 cup (150 ml) hot water (about 212°F/100°C) for 5 minutes, then remove the tea bag.

Add whole milk and simple syrup to taste for your preferred sweetness to make the milk tea.

Finally, combine the tapioca pearls and milk tea to make bubble milk tea.
