Ingredients

Serves 5 servings
  1. 3 1/3 poundszucchini (about 1.5 kg)
  2. 1/2 poundbell peppers (about 0.25 kg)
  3. 4 1/4 cupstomato juice (1 liter)
  4. 1 bunchcilantro
  5. 1 bunchparsley
  6. 1 bunchdill
  7. 1/4 cupoil (about 60 ml)
  8. Salt
  9. Mixed spices
  10. Cumin
  11. 2large onions
  12. 2bouillon cubes
  13. Black pepper
  14. 1 poundwashed rice (about 0.5 kg)

Steps

  1. 1

    Hollow out the zucchini and soak them in salted water for a bit. Add the bell peppers as well.

  2. 2

    Chop the onions and sauté them in oil until slightly golden, then add the tomato juice.

  3. 3

    Once the sauce thickens, add the chopped herbs and let them cook for a short time. Remove from heat, then add the rice and spices.

  4. 4

    Place the zucchini cores at the bottom of the pot. Stuff the zucchini about two-thirds full (do not overfill). Arrange the peppers on top and add a bouillon cube.

  5. 5

    Add hot water or broth, but not too much, since the zucchini will release water, especially if you included the cores. Add the second bouillon cube.
