Ingredients

  1. 1 cupred lentils (about 200 grams)
  2. 6 1/3 cupshot water (about 1.5 liters)
  3. 1small onion, thinly sliced
  4. 7garlic cloves, minced (for topping at the end)
  5. 5 tablespoonsoil (for topping)
  6. 1/2 cupchopped fresh cilantro (about 15 grams)
  7. 3whole green chili peppers
  8. 1 teaspoonground cumin
  9. 1 teaspoonground coriander
  10. 1 teaspoonground ginger
  11. 1 teaspoonsalt
  12. 1/2 teaspoonground turmeric

Steps

    Combine the lentils, hot water, onion, spices, green chili peppers, and salt in a pot. Bring to a boil over medium heat.

    Simmer until the lentils are tender. Then use a whisk or immersion blender to blend the soup until smooth.

    Heat the oil in a skillet. Add the minced garlic and cook until golden brown, then pour over the lentil soup.

  4. 4

    Add the chopped cilantro, turn off the heat, and serve hot with rice. Enjoy!
