  1. 3 tbspOlive Oil
  2. 1 largeOnion
  3. 1Bay Leaf
  4. 3 cloveGarlic
  5. 1Celery Stalk
  6. 150 gramsPancetta
  7. 125 gramsButton Mushrooms
  8. 4Chicken Breasts
  9. 1/4 tspBrown Sugar
  10. 90 mlVermouth (or dry white wine)
  11. 2400g cans of Chopped Tomatoes
  12. 1sprig of Oregano
  13. 1sprig of Rosemary

Steps

  1. 1

    Heat oil in a large casserole dish, add onion, garlic and celery and slow cook over low heat for 6-8 mins.

  2. 2

    Add pancetta and mushrooms then increase heat and cook for 4-5 mins, spoon out and set aside.

  3. 3

    Add remaining oil and brown chicken then add vermouth and cook until vermouth has evaporated.

  4. 4

    Add tomatoes, sugar, oregano, rosemary, bay leaf and 75ml of cold water, bring to boil then stir in pancetta mixture.

  5. 5

    Cover and simmer for 20 mins. Serve with either pasta or new potatoes and seasonal vegetables.
