Ingredients

  1. 2 cuppumkin puree
  2. 1 canfull fat coconut milk
  3. 2 lbchicken breast, cubed
  4. 1onion
  5. 2bell peppers
  6. 1 cuppineapple chunks, canned or fresh
  7. 1/2 cuppineapple juice
  8. 2 eachsweet potatoes
  9. 3 clovegarlic, minced
  10. 2 tbspcoconut oil
  11. 1 lbmeduim raw shrimp (optional)
  12. spices
  13. 2 tbspcurry powder
  14. 1 tspcinnamon
  15. 2 tspcumin
  16. 1 tspnutmeg
  17. 1 tspginger
  18. 1 tspblack pepper

  1. 1

    cut onions and bell peppers into half inch pieces

  2. 2

    saute onions and garlic in coconut oil on low heat until onions start to become transparent. add bell peppers and continue until onions are compketely transparent and peppers start to soften.

  3. 3

    place sauteed ingredients in a crock pot and add all other ingredients. stir well.

  4. 4

    cook in crock pot on low heat for 6-9 hours.

  5. 5

    optional, but delicious: saute shrimp with butter and garlic and add 10 minutes prior to serving.

  6. 6

    salt, pepper, and hot sauce to taste.
