  • 1 boxlinguine
  • 1/2 cupolive oil
  • 1/3 cuplemon juice
  • 1/2 cuporange juice
  • 3-4garlic cloves, minced
  • 5 teaspoonsgrated lemon peel
  • 4 teaspoonsgrated orange peel
  • 1 teaspoonsalt
  • 1/4 teaspoonpepper
  • 1 pounduncooked shrimp (peeled and deveined)
  • shredded parmesan cheese and minced fresh parsley (optional)

    Cook linguine according to package

  2. 2

    In blender, combine olive oil, oj, lemon juice, garlic cloves, lemon peel, orange peel, salt, pepper, process until blended well.

  3. 3

    Pour mixture into large skillet, bring to boil.

  4. 4

    Reduce heat, stir in shrimp.

  5. 5

    Let simmer, uncover 3 - 4 minutes or until shrimp turn pink

  6. 6

    Drain linguine, toss with shrimp mixture.

  7. 7

    Sprinkle cheese and parsley if desired
