Combine 9 ounces flour and salt in a bowl of food processor. Pulse 2 or 3 times.

Add lard in 4 or 5 chunks. Pulse 10 or 15 times until mixture looks like crumbs. With processor running add waterin slow steady stream. Until ball is formed. Approx 30 seconds.

Sprinkle remaining 1/4 cup flour on counter. Remove dough from bowl. Knead until not sticky. Wrap dough in plastic wrap. Let sit for 1 hour.

Evenly divide dough into 8 equal pieces. Form 8 balls. Roll each ball into 7in rounds.

Heat electric skillet to 375°

Cook each for 4 minutes. Until lightly golden.
