I was craving vegetables and had a bunch of fresh ones in the fridge but had no idea what to have. So I just started chopping and slicing and this is where I ended up. It worked a treat.

I was craving vegetables and had a bunch of fresh ones in the fridge but had no idea what to have. So I just started chopping and slicing and this is where I ended up. It worked a treat.

Spray a frypan with olive oil and allow to heat up

Add potatos to the pan and fry for about 5 min

Add all the other vegetables and garlic mix well
- 5
Turn heat down after about 10 min and keep stirring so nothing sticks to the bottom of the pan

After vegetables feel mostly soft add apple cider vinegar and curry powder. Mix very well so all vegetables get coated

You can add salt and pepper to taste or a dash of soy sauce

Serve as a side dish and enjoy. I prefer it with sausages or white meat
