  1. 8hard cooked eggs,* finely chopped
  2. 1/3 cupmayonnaise
  3. 4 slicecrisp cooked bacon, crumbled
  4. 1/4 cupfinely chopped red sweet pepper
  5. 2 tbspsnipped fresh chives
  6. 2 tspdijon style mustard
  7. 1/4 tspsalt
  8. 4croissants
  9. 1 cupfresh spinach leaves
  10. 4 sliceprovolone cheese
  11. 1snipped fresh chives, optional
  12. 1paprika, optional

    In medium bowl combine eggs, mayo, bacon, red pepper, 2 Tbsp chives, mustard & salt

  2. 2

    Make a pocket in each croissant by cutting horizontally from one side almost to the other side. Line the croissant pockets with spinach & cheese. Fill with egg mixture. If desired, sprinkle sandwiches with additional chives & paprika.
