I wasn't sure how it was going to turn out but I gave it a shot and grabbed all the veggies out of my fridge, too lazy to go out in the cold in NYC and came up with this soup. Surprisingly it is quite good, and I am usually not a big fan of vegetable soups! I recommend this recipe :)

Ingredients

6 servings
  1. 1/4 bunchlinguine (or pasta of choice)
  2. 2 tbspolive oil
  3. 1 packageschicken broth cube
  4. 1/4 bunchbroccoli
  5. 1 cupfresh spinnach
  6. 1/2 cupsliced mushrooms
  7. 1/2 cupchopped celery
  8. 1 dashdried basil
  9. 1 dashsalt according to taste
  10. 1 dashpepper according according taste
  11. 1 tbsp*fresh chopped parsley (not required)

Steps

20 mins
  1. 1

    medium heat, boil water in medium pan fill up to just right below handles

  2. 2

    throw in pasta with two table spoons of olive oil and cube of broth

  3. 3

    while pasta is half way cooked throw in all rest of vegetables

  4. 4

    add dry basil and pepper

  5. 5

    do not forget to taste broth periodically to check for taste of spices (everyone has different opinion)

  6. 6

    turn down heat to low-medium and wait for spinach to change color and for pasta and broccoli to cook

  7. 7

    enjoy!

  8. 8

    for a bonus taste after meal is prepared and poured into bowl, you may add table spoon of fresh chopped parsley.
