Ingredients

  1. 1 tbspolive oil
  2. 1 smallonion, diced
  3. 2 clovegarlic, minced
  4. 112 ounce jar roasted red peppers, roughly chopped
  5. 2 candiced tomatoes, undrained
  6. 1 cantomato sauce (15 ounces)
  7. 1 cupvegetable broth
  8. 1 tspsugar
  9. 1/2 tsppepper
  10. 3 tbspchopped fresh basil, plus more for garnish - or- 1 1/2 Tbsp. dried basil
  11. 3/4 cuphalf and half - or - condensed milk

  1. 1

    saute onion in oil until soft.

  2. 2

    Add garlic and chopped peppers and saute 2 minutes.

  3. 3

    add diced tomatoes, tomato sauce, vegetable broth, sugar, pepper, and basil. simmer 5 minutes.

  4. 4

    blend with either a blender, immersion blender, or food processor

  5. 5

    add half and half or condensed milk. warm through, but do not boil.
