Ingredients

5 servings
  1. 5wild, fresh rockfish fillets
  2. 1 cupflour
  3. 1 cuprice flour
  4. 1 cupice cold water
  5. 1 tspsalt
  6. 1 tspgarlic powder
  7. 1 tspChinese 5 spice
  8. 1 tspginger
  9. 2 cupspanko bread crumbs
  10. Dipping sauces
  11. Szechuan peanut sauce
  12. Oyster sauce
  13. Hoisin sauce
  14. Siracha sauce

Steps

  1. 1

    Wash and make sure there are no bones in the rockfish fillets.

  2. 2

    Place flour in a LG shallow dish.

  3. 3

    In another shallow dish combine; rice flour, water, and seasonings.

  4. 4

    Add panko to a third dish.

  5. 5

    In a lg frying pan, add oil to 1/4 inch deep. Heat on medium high heat until oil is ready to fry.

  6. 6

    Dredge fish in flour, then tempura, then panko. Fry until golden brown on both sides. Adjust heat according.

  7. 7

    Drain on paper towels when done.

  8. 8

    I served over herbed white rice. With each of the dipping sauces. Enjoy.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
