My husband had pepper jelly dressing on a trip to New Orleans and asked me to try and make it. This is a hot sweet and spicy dressing. It’s great for salads or as a drizzle for seafood, meats and vegetables. The addition of the fresh jalapeño provides a freshness and heat. Remove the seeds for a milder dressing.

Ingredients

  1. 3/4 cuphot pepper jelly (I prefer Stonewall Kitchen Hot Pepper Jelly)
  2. 3/4 cupseasoned rice vinegar
  3. 1fresh jalapeño, stem removed cut in slices, remove seeds for less heat
  4. 1/4 teaspoongranulated garlic
  5. 1/4 teaspoonsalt
  6. To taste Pepper

Steps

  1. 1

    Combine all ingredients in a food processor or blender until well blended. Taste and add additional vinegar or jalapeños if needed..(I have found that their are big differences in heat levels in jalapeños and sweetness levels in pepper jelly).

    Serve as a salad dressing or a drizzle for seafood, meats and vegetables.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
