Ingredients

4 servings
  1. 44-6 ounce boneless skinless chicken breasts
  2. 1Shallot, chopped
  3. 4 ozWild mushrooms sliced
  4. 1/2 cupDry white wine
  5. 1/2 cupHeavy cream

Steps

  1. 1

    In a large, well oiled skillet over medium heat, add chicken and cook for 3-5 minutes per side or until lightly browned.

  2. 2

    Transfer chicken to a plate.

  3. 3

    In the same skillet, sauté shallot for 1 minute.

  4. 4

    Add mushrooms and sauté until softened.

  5. 5

    Add wine and simmer until reduced by half, scraping up any browned bits clinging to the pan.

  6. 6

    Add cream and simmer until slightly thickened.

  7. 7

    Return chicken to pan and cook for 2-5 minutes, or until cooked through.
